Mini Baby Cinnamon Rolls Recipe
Holiday season will forever be my (second) favorite time of year. I love the idea of hunkering down, getting cozy, lighting candles, and watching a movie on a Thursday night; Or waking up in festive pajamas on a Sunday morning, making a hot coffee with peppermint mocha coffee creamer, taking out my baking supplies, and having a full-on holiday baking day with Christmas Classics playing in the background.
Every year I find myself making these extra yummy, extra gooey, home made cinnamon rolls. They check every box for a cozy, holiday sweet treat. They have a warm, buttery, cinnamon center; a soft, fluffy, comforting bite; a vanilla, cream cheese glaze; and a fresh-baked aroma of a cozy day at home amidst the blistery cold hustle and bustle outside.
Here’s everything you need for this heaven-sent, cozy season sweet treat.
Ingredients—
Dough
• 1 cup warm milk
• 2 ¼ tsp active dry yeast
• 2 large eggs, room temp
• ⅓ cup melted butter
• ¼ cup sugar
• 1 tsp salt
• 3 ¾–4 cups flour
Filling
• ½ cup very soft butter
• 1 cup brown sugar
• 2 tbsp cinnamon
Icing
• 7 oz cream cheese, softened
• ¼ cup butter, softened
• 2 cups powdered sugar
• 2 tbsp milk
• 2 tsp vanilla
(Double this for extra dipping!)
⸻
Instructions—
•Make the dough: Warm the milk to about 110°F and sprinkle yeast over top. Let sit 5–7 minutes until foamy. Add eggs, melted butter, sugar, and salt. Mix in flour gradually until a soft dough forms. Knead 5–7 minutes until smooth. Place in a greased bowl, cover, and rise for 1 hour or until doubled.
•Roll + Fill: Roll the dough out into a rectangle about 5×4 inches (smaller so the rolls stay mini). Spread the filling to cover the whole rectangle. Roll, slice, and place them close together in a greased baking dish.
•Bake: Bake at 350°F for 15–18 minutes, until lightly golden. For the full tutorial, you can watch the video here.
•Make Icing: Combine cream cheese + butter until smooth. Add powdered sugar, milk, and vanilla until creamy and spreadable.
•Finishing touches: Spread the icing over them warm rolls, serve, and enjoy!
These are also great to bring to a holiday gathering, too! This year, I made these for a holiday party and packed them in gold cookie tins with red velvet ribbon. I’ll include information on my packaging and favorite baking supplies here!
